This was me on Saturday. On Saturday, I had a list of about seven recipes that I was doubling or tripling, all of the ingredients, my iPhone filled with new podcast episodes, and my cute apron (see above). I worked through three of the recipes between running a few errands, doing stuff for church, and taking care of kids. I figured the family could help me finish up the last few on Mother’s Day Winking smile

And then, I got sick.

My youngest woke up on Sunday fine, but quickly started complaining of not feeling well. Soon after, she was running a fever. I decided to stay home with her the first part of church and swap out with the hubby half way through. After everyone left, I started feeling sick. I texted the husband and went back to bed while my little one was sleeping (she had fallen asleep on her bed, that’s when I knew it was bad). I felt worse and worse as the day went on.

Monday, I was not doing well and canceled The Digi Show recording. My husband said that’s when he knew it was bad. I don’t think I have ever canceled a show due to sickness in the two years I’ve been doing it. And I have been sick a lot during that time.

We spent three hours Monday night in the urgent care with our youngest who was diagnosed with Hand, Foot, and Mouth disease. I spent the rest of the night rubbing her itchy feet (although HFM rash is not “typically” itchy). At 5:40am, I hit a wall. I walked out of my room to see my oldest off to school and went and got in the littlest girls bed and slept until 9.

I’m still not feeling real great, but mom’s don’t really get time off. My son started with a fever last night which means no scout campout…except his leader is an ER doc and said as long as he’s not running a fever, send him, and they will put him in his own tent. We’ll see.

Mostly, now, I’m tired and run down. Sleeping a lot in-between running my oldest to, from, and around town. At least I’m getting caught up on Feedly, Twitter, Pinterest, and my podcast playlist! Winking smile I guess those freezer meals will need to wait!

I Did The Ironman

People that know me, know how ironic the title to this post is. It’s almost comical actually. I detest exercise! I don’t exercise and will come up with any excuse I can think of to not start a fitness program. While we were in St. George for our girls weekend, the Ironman was going on. We didn’t know this before we getting there. We ended up eating lunch on the course and watching part of the race. It was pretty cool to see the racers watching and searching for their family members on the sidelines. It actually made me cry several times to see runners give their wife a kiss as they ran past. So sweet!

We watched the first place overall cross the finish line and the thing that was crazy to me, he didn’t even look winded…at all! I can’t relate to the desire to push my body to the point of death, but it was fun to watch other people do it, I suppose. Now, I can say, I did the Ironman…sort of.

I became friends with these two ladies in 2004. We were asked to work together in leadership positions over several units of our churches youth groups. I didn’t really know either one of them before that time, but lasting friendships were quickly formed! I love that these ladies tell me the truth, share their knowledge and opinions, love me for who I am, forgive me for my imperfections, and make me laugh until I cry!  We saw miracles happen as we worked together, volunteering many hours.

The two of them have relocated to Utah over the past few years and we have wanted to do a girls weekend for a long time. We were finally able to get it scheduled and just decided to do it. We each missed some of our kids events to be there, but we knew there would never be a perfect time. So glad we were able to do it. Being with friends like this is really good for the soul!!

It’s always so refreshing to be with people that “get” me! I don’t have to explain anything…things are just understood! That’s what it’s like when Katie and get together. Katie does a lot of writing for me at The Daily Digi and really is my “go-to-girl” for many things. I love that she “gets” me. We have been known to send each other emails at the same time about the same thing.

I popped down to Utah for a long weekend with some girlfriends (more on that later) and added on a day, so Katie and I could get together. It was so fun to visit and catch up with her. It was a much needed break! I have always wanted to meet Kayla Lamoreaux in person, so I sent her an email (several months ago) to see if she could join us.

We ate some really, really good food and visited a ton! Right as we would think we were going to leave, one of us would ask a question and the discussion would keep on going. We talked about everything in digital scrapbooking and came up with lots of fun ideas…talked about things we want to do in the future…dreams we have, and even how it used to be in the “good old days” of digital scrapbooking. We even got Kayla booked for an upcoming Digi Show! Saved me some work, love that!

Katie had the brilliant idea that we should go over to The Corner Bakery, which is a favorite place of mine that Katie introduced me to. I was thrilled because I didn’t think I was going to make it there this trip. We had desert at the Corner Bakery and chatted it up some more. This time, the conversation turned to more personal things and we laughed as we related to each others stories! That chocolate Whoopee Pie is the best thing EVER! If only the Corner Bakery shipped!

Waiting for Butterflies

When we were at the Botanical Garden in Arizona, we went to the Butterfly Garden. Little Miss stood very still waiting for a Butterfly to land on her. She began to get frustrated as she watched other people have butterflies land on them. Then, finally, right as we were ready to give up and leave, a butterfly landed on her shoulder. She squealed and was delighted and enjoyed the butterfly on her shoulder for a long time.

Sometimes in life, we have to wait just a little longer for the butterflies to come, but just as we are ready to give up…they come.

Getting Good Deals on Airfare

It’s not too big of a secret that I love to travel. We can usually get really good deals on hotels just about anywhere, but airfare is getting more and more expensive. I wanted to find a site that would help me watch airfare prices of places we want to visit, so I would know a good deal when I see it. I asked on Twitter and got a couple of recommendations and Googled as well. I found Airfare Watchdog and have been using it for a couple of months now. I enter the departure city and destination city and they do the rest. Anytime a lower fare pops up, they email me. It has really helped me figure out what the average prices are going to be, which also helps me recognize a good deal when I see it.

I haven’t actually purchased any tickets yet because of it, but I have noticed prices dropping a bit again over the past week…hoping it’s a new trend!

Chihuly in Arizona

IMG_2472The day we left Arizona, we went to the Desert Botanical Garden. We had some time to fill between needing to check out and our flight leaving. I was surprised how much there was to see and do there. I thought it might take a couple of hours and then we would need to find something else to do. We ended up spending almost 5 hours there. I took lots and lots of photos! It was fun to have so many beautiful things to practice manual mode on.

On our way in, I had noticed that there were some beautiful Chihuly works out front, so we stopped to take some pics on our way out.

Meeting Kimberly Kalil

While I was in AZ I also was able to get together with a Daily Digi Team member, Kimberly Kalil. I made the arrangements to get together with her and really, thought nothing of it. Then, when she came to my hotel to pick me up, I had a moment of panic when I realized that I wasn’t too sure if I would recognize her and I had no idea what kind of car to watch for. I thought to myself: “WHAT am I doing!?” Then, Kimberly jumped out of her car with a smile on her face that instantly calmed my fears.

We had a lot to talk about and really didn’t stop talking the entire time we were together! She took me to one of her favorite lunch places and I am willing to admit that the family and I went back TWO more times (it was that good)!

One of my family’s visits to Wildflower Bread Company was at a different location and they didn’t have the beautiful glasswork, so it made me even more curious. I never asked anyone about it though.

I’ll be back in a few days with a photo of the unexpected location that I did (for sure) find some Chihuly work while in AZ.

I was in Arizona last week on vacation and took some time out from hanging out at the pool with my family to meet some people I’ve worked with online. My first lunch was with Becky Higgins and her awesome team: Brandi, Kari (who also works with Jessica Sprague), and Christy. They were a super fun bunch of ladies and I actually felt like I was having lunch with old friends! We instantly learned that I know Brandi’s mother-in-law in my real, offline life and I had actually met Brandi once before….funny how life happens. It was Becky’s idea to have everyone put on their Digi Show t-shirts for the picture and I was flattered!

After eating lunch, we headed to Becky’s for some cake. One of the first things I noticed when walking in her house was this focal point:

Becky is as nice and genuine as she seems! I really was (and am) humbled that she and her team would take half a day out of their busy schedules to spend with me. The funny thing was that we hardly even talked business at all. There was so much from our regular lives that we have in common, we just chatted about those things. I was a little star-struck as I sat in Becky’s kitchen watching her slice a piece of chocolate cake for me, wearing a Digi Show t-shirt! (sorry for the blurry photo…that’s the star-strucked-ness manifesting itself):

Dining at Disneyland

For me, one of the most fun parts of a vacation is eating food I didn’t have to cook. I think I get it from my mom, she’s very much the same way. One of my frustrations with going to Disneyland has always been the food. It’s not that good. We had a couple of restaurants that we would eat at and not stray. We had figured out how to feed five of us at Carnation Café and Café Orleans for as much as it would cost to eat off site. But, that meant we had to eat almost every meal at those two restaurants.

This last trip though, Disney had revamped a lot of their menus and opened a new restaurant. They also closed Carnation Café for refurbishment and expansion. Here are a few of the things we ate from the new menus and what I thought:

My sister and I were most excited to try Jolly Holiday Bakery. We ordered and shared the Chicken Waldorf Sandwich, the Caprese Sandwich, a mini apple pie, and a cupcake:

We both liked each sandwich, but our preference if we had to chose was the sandwich we each started with, for me that was the Waldorf. We agreed that the cupcake looked much better than it tasted. It really was not anything very special except that we were at Disney. I could have bought it at the grocer store and not known the difference.

We really liked the balsamic dressing and the fresh basil on the Caprese sandwich. I loved the addition of the smoked turkey and craisins in the Waldorf.

The apple pie was wonderful! We talked about going back for another, but never made it back (short weekend trip). It was really, really good!!

I like to try and get a snack at the Bengal Tiger at least once per trip. It’s across from Indiana Jones and has little to no seating. The food though, is very good. I love the bacon wrapped asparagus, vegetable skewer, and beef skewer. My sister liked the chicken. Because the portions are super small, it can get expensive to eat a meal here.

Jolly Holiday for Breakfast

We were really excited about eating breakfast at Jolly Holiday, but were a bit disappointed. The quiche was very similar to something I get at Panera but was almost $9 at Disney. The Abuelita, however almost made up for it. Cinnamon (syrup not powder) flavored hot chocolate…so YUMMY!! The next day, we decided to split a breakfast at Mimi’s and then hit Jolly Holiday for an Abuelita. We spent about the same amount of money and had a lot more food!

World of Color Dinner at Wine Country Trattoria

A year ago, my family and I ordered the World of Color picnics. They were a pretty good value considering you got a bag and WOC passes and didn’t have to go to the machines and gamble on getting them. I got sick from my meal though and most of us were still hungry.

My sister and I decided since it was just the two of us, we would splurge and try WOC at Trattoria. I forgot to take pictures of my main course and didn’t take any of her meal at all. I had the vegetarian pasta (no meat, but not vegan), and she had the steak. She said it was a really, really good steak. Here’s my soup (which was really good) and our deserts, which were just okay (lots of coffee and espresso flavored stuff, yuck):

Everything here was just okay. Nothing I would be super excited to go back and have again.The cupcake here was better than the one at Jolly Holiday, but I would still prefer the pie!

We went to Paradise Garden Grill in Disney California Adventure a couple of times. There are a couple different sections here with different menus. One side has pizza, pasta, and salads and the other has skewers. Here’s the skewer menu:

The skewer menu was a little confusing at first, then I noticed the “step 1” and “step two” and was able to figure it out. I had the Vegetable and Tofu skewer (I actually really like tofu…bordering on love) with the Tzatziki sauce. As described in the menu it came with rice, pita, and cucumber salad.

This was probably the largest mean for the price I had while at DL. Everything was quite good. The pita and cucumber salad were both good and I really liked the skewer with the sauce. The rice was more like a minute rice, but wasn’t bad with the sauce on it. I should have asked for extra sauce though because of this.

My family ate the pasta and pizzas and really liked them. Between all of us we had several different dishes (barbeque chicken pizza, cheese pizza, Caesar salad, and a pasta with alfredo). Everyone seemed to like their dishes.

Brats and Baked Potatoes at Troubadour

This is a hidden treasure back by the Princess Meet and Greet area. It’s not usually crowded and there is plenty of seating. We ate lunch here a couple of times. We had combinations of brats and baked potatoes which were all very good. The pretzel bread bun was super good. I have an issue with soggy bread though and with the sauerkraut the bun got soggy fast. The next time, I hurried and took everything off the bun and ate the separately. Our last day in the park, my kids were riding Indiana Jones one last time, so I grabbed some skewers from Bengal Tiger and then we booked it over to Troubadour and got the kids brats (they love them). We sat near the theater and the girls were able to see the princesses changing shifts, it was fun. No photos, sorry, not sure what I was thinking there.

Other Treats

  • The Mickey cookie from Jolly Holiday was quite good.
  • We also enjoyed churros from the vendor across from Toy Story Mid Way Mania (I still hold the family record for this game and won our car several times). The churros were great to snack on while waiting in line. I was actually surprised at how good the Disney churros were, but that might be because I am used to Costco churros, which are horrible.
  • We got popcorn in a souvenir bucket (the bucket was equal to two of the regular popcorns and was slightly less expensive).
  • Hot chocolate when I was there in the rain with my sister.
  • The flourless chocolate cake at Jolly Holiday which had a great texture and great flavor, I was so glad I was sharing it with my sister because it was super rich.
  • A candy apple (cinnamon) from the candy store by Winnie The Pooh. They don’t slice them for you anymore (boo) so we had to wrestle with a plastic knife, but it was worth it!
  • Corn dogs and cheese dogs, I love the corn dogs. I got a cheese dog this time because I love them at the mall and it was just too much. I could only eat part of it and was wishing I had ordered the dog instead.

Overall, I would say that I am really happy with the overhaul of the menus and the new restaurants that have opened! I will be glad when Carnation Cafe is open again and has indoor seating. That is by far, our favorite place to eat at Disney! I’m also happy with the fruit choices they are adding to things. It’s always nice to have a bag of apples to snack on once in a while!
